Costa Brava Brings Mediterranean Cuisine to St. Augustine

Costa Brava brings the flavors of the Mediterranean to downtown St. Augustine with a delectable sharing menu and a comprehensive wine list. Open for breakfast, lunch and dinner, the restaurant invites guests to start or end their day at their location inside the Casa Monica Resort and Spa

The menu takes guests on a culinary journey along the Mediterranean with dishes inspired by North African, Spanish and coastal cuisine. The sumptuous menu includes dishes such as Mediterranean Baked Salmon, Sherry Baked Sea Bass, Kessler Calamari, Bleu Cheese Beef Tenderloin – just to name a few.

Chef John Botkin came to Costa Brava with years of culinary experience acquired at restaurants such as Clyde’s of Tysons Corner, and McCormick & Schmick’s in Las Vegas.  He is also a former executive chef at the Bellagio Hotel in Las Vegas. John transplanted to coastal North Carolina and started working at the Sanderling Resort on the Outer Banks. There, he acclimated to a cuisine based in S.O.A.L. sustainable, organic, artisanal and local.

John first began cooking because of his passion for food and the excitement of working in a restaurant. Finding influence in Caribbean cuisine, one of John’s favorite memories is of a beach barbeque in St. Thomas, USVI. He and his friends cozied up to a driftwood fire after grilling fish and lobster they caught right off the beach. He says it doesn’t get much better than that – and we tend to agree.

John wants his guests to have fun with food and expand their culinary experience. To help diners do so, he enjoys adding new ingredients to familiar dishes.

Visit Costa Brava inside the Casa Monica Resort and Spa to enjoy Mediterranean cuisine right here in downtown St. Augustine. You can also sample Chef Botkin’s signature dishes at Made in St. Augustine.
